I have only been to Santander and Seville In Spain.
I am not very attracted to Barcelona or Madrid as it's full of French tourists, but on the contrary I felt in love with Seville.
Seville is one of the most interesting cities I've seen for architecture : it's a medieval catholic city that was invaded by the Muslims many centuris ago, but instead of destroying everything, they built around it. So you can see the cultural and religious layers on the buildings.
The food was amazing and weather too.
I strongly recommend to visit Seville, rent a car and do Cordoba and the Andalusia region. It's the most authentic and mindblowing part of Spain
